Air-fryer Cajun Sweet Potato Fries

Have a bag of Murasaki sweet potatoes? Coat them in some avocado oil with cajun seasoning and throw them in an air fryer! Served with a Tahini Sauce.

Ingredients
  

  • 3 Murasaki Sweet Potatoes
  • 2 tbsp Avocado Oil
  • 2 tsp Cajun Seasoning
  • 1 tsp Salt
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder

Tahini Sauce

  • 1/4 cup Tahini
  • 1 tbsp Avocado Oil
  • 1 Meyer Lemon, juiced
  • 2 Garlic Cloves
  • 1 tbsp Maple Syrup
  • 1/4 tsp Za'atar
  • 1/2 tsp Black Pepper
  • 1/2 tsp Sea Salt
  • 1/4 cup Water

Instructions
 

  • Start by rinsing your Murasaki sweet potatoes twice. After rinsing them, pat and dry them with a paper towel. Dry the sweet potatoes completely before adding the avocado oil and seasonings.
  • Preheat your air fryer on 400 degrees F for 10 minutes.
  • Toss the Murasaki sweet potatoes in avocado oil and then add the seasonings. 
  • Add the fries to the air fryer and cook for 25-30 minutes. Shake the air fryer handle every 10 minutes to make sure that they get crispy. 
  • Enjoy! 

For The Tahini Sauce

  • Throw all of the ingredients into a food processor and process for at least two minutes. Refrigerate any leftovers and store for a week or two.
