"Avocado Brownie Layer"

  • 1 large Avocado
  • 2 Egg Replacer from Bob’s Red Mill (or aquafaba from chickpeas)
  • 1 tsp Vanilla Extract
  • 1/2 cup Coconut Sugar
  • 3 tbsp Earth Balance Vegan Butter (or coconut oil or ghee)
  • 1/2 cup Bob's Red Mill Almond Flour
  • 1/4 cup Coconut Flour
  • 1/2 cup Cocoa Powder
  • 1 scoop Trader Joe's Super Green Drink Protein Powder
  • 1 tbsp Ground Flax Seed
  • 1 tsp Baking Soda
  • 1/2 tsp Sea Salt
  • 2 tbsp Macadamia Milk

"Chickpea Brownie Layer"

  • 1/2 can of chickpeas, drained and rinsed
  • 1/2 cup Wild Friends Creamy Peanut Butter
  • 2 tsp Vanilla Extract
  • 2 tbsp Vanilla Bean Maple Syrup
  • 1 tbsp Hemp Seeds
  • 1/2 cup Enjoy Life Chocolate Chips

  • Preheat your oven to 350 degrees F and line a baking pan with parcement paper.
  • Prepare your Bob's Red Mill Gluten Free Egg Replacer and set aside.
  • Slice your avocado in half and remove the skin and pit. Place into a food processor with your egg replacer, vanilla extract, coconut sugar, and butter. Process this until the mixture is creamy and the avocado is smoothed.
  • Once the mixture is creamy and smooth, add your flours, cocoa powder, ground flax, protein powder, baking soda, and sea salt. Process this first for two minutes and then proceed to add 2 tbsp of Macadamia Milk. Process again for one minute.
  • Spread the mixture evenly using a silicone spatula into the pan and set aside.

For the Chickpea Brownie Layer

  • Begin by draining the chickpeas from the aquafaba. Save the aquafaba and use it as the egg in this recipe instead of the Bob's Red Mill Egg Replacer if you do not have it. Thoroughly rinse the chickpeas and remove the skin from the chickpeas.
  • Add the chickpeas, peanut butter, vanilla extract, and maple syrup to a food processor. Process until smooth and creamy for around 3 minutes.
  • After 3 minutes, add a tbsp of hemp seeds to the mixture and process.
  • Add a 1/4 cup of the chocolate chips to the mixture and stir. Spread on top of the brownie layer and top with additional chocolate chips.
  • Bake in the oven for 20 minutes. Remove from oven after 20 minutes and allow to cool before cutting.
